So, first off, it's effin' GLUTEN FREE so e'erbody who's scared of flour, rejoice (I'm pretty scared of flour too). I made this for my 10 year old son who basically hates anything "healthy," not telling him there was zero pancake mix or flour up in here. Here's what I did for 2 crepes:
Mix/mash 2 free-range eggs, a banana and a sprinkle of cinnamon. Cook in hot omelet pan. Fill with blueberries and Greek yogurt mixed with honey. THAT IS IT!
There's also the local bacon I cooked to a crisp and coffee.
Can it get any easier making a gourmet breakfast?
