I'm doing it, just like the rest of ya - it's a new year and I'm turning a new leaf, like I do every damn year. I make it a few weeks and fall back into the same old thing. A slice of pizza here, a burger there, late-night nachos here and there... red wine and dark beer everywhere.... so it's January 2, and obvs we had to have some champs to ring in the new year yesterday, so today it begins. Who's with me?
So you want to know what the delicious hippie h food shown above consists of? Super easy. Super filling. Check it:
1/2 toasted Alvarado Street bakery sprouted bagel
spread on home made guacamole (I used instead of fresh avoiding because it was going to go to waste, otherwise I'd do fresh), top with sprouts (my awesome daughter makes these)
The Chia pudding: this shit is off the hook. Mix it up the night before and refrigerate.
Mix: 1 can of full fat coconut milk
1/4 cup chia seeds
1 scoop of a super greens powder (I used Amazing Grass superfood)
In the morning, stir and top with:
a sprinkle of coconut flakes if you like (I opted out), and sprinkle of unsalted sunflower or pumpkin seeds.
Don't let the greenish tint scare you - this is good shit.
