I like to use a "healthy carb" like Dreamfields - whatever variety you want! I'm partial to penne. I cooked 2 chicken breasts, diced them and sautéed zucchini, mushrooms, and shallot.
For 4-5 servings of this sauce, mix together in a sauce pan:
one cup of 1/2 and 1/2
a couple T. store bought pesto
a couple T butter
a 1/4 cup shredded parmesan
some salt and cracked pepper.
Cook about 10 minutes until it thickens a bit. I like to throw on crushed red pepper. Toss with pasta.
