If I tell my husband it's salad for dinner, he's not too psyched but if I add "there's steak on it" that usually does the trick.
Tonight was a night the kids have the All American nuggets, green beans and mac and cheese (but, BTW it was home made mac and cheese and tons better than Kraft. There were bacon bits.)
For 2 salads I used:
1 grass-fed filet mignon at Walmart (about $6!). Season with some sea salt,EVOO, and I used Montreal steak seasoning. "Sear" or cook it to your liking in a pan, We did medium. Slice into medallions.
most of a package of Whole Foods arugula (it's out of season yo)
a few pickled baby beets, sliced
diced green onion
Dressing: 2 T olive oil, squeeze fresh lemon, pinch of salt, thyme and pepper
tsp. chopped garlic
I tossed the arugula in the dressing, put in dishes then topped the salad with the other ingredients, seared beef last of course.
