Here's a way to use all that leftover stuff from Thanksgiving or Christmas dinner wisely. And it pairs well with bubbly, so why not make it a brunch? When you've escaped your family, invite some fun friends over for Post TG or post Christmas Brunch.
Here;s all you need:
leftover turkey, stuffing, cranberry sauce and gravy (if you want). An egg or two.
In a big bowl, mix up your turkey and stuffing with egg (this all depends on how much leftover you're using so you gotta use your noggin' here) or two. Form into cakes.
Put on some water for poaching eggs. Think eggs benedict - one egg per cake. It's that easy.
Fry your cakes in vegetable oil until they're nice and crispy and browned. Start poaching when your cakes are just about done. Top the cakes with an egg and some cranberry, or if you want, gravy and then the cranberry on top.
Serve with bubbly and wow your people.
