I'm a Southern girl and get more Southern with age. But, I've always loved grits. I think I might be the only person that orders them at 1 am at Waffle House! Cheddar cheese added of course. Sometimes they throw on a slice of American and I don't even bitch about that.
I use Quaker quick grits. Cook by directions, then start adding:
1 T. chopped garlic
salt and pepper and paprika
some bacon crumbles or prosciutto like I used here
a 1/2 cup or so of shredded cheddar
some cream at the end
Cook until done and douse with Louisiana hot sauce. Have coffee. Something about the combo of grits and coffee really does it for me!
