Ok all you need is a crockpot and this:
a package of chicken thighs (I like them, use breasts if you want)
a can of tomatoes
an onion (white or yellow)
2 green bell peppers
a few cloves of garlic
thyme, salt, pepper
RICE or egg noodles
In the morning, throw the chicken in the bottom of the pot. Pour on the tomatoes, then throw on all the other ingredients. Turn to low or high, depending on the amount of time you'll be gone. Maybe a little water if you'll be gone all damn day.
Come home to a house smelling of an Italian kitchen. The chicken is all tender and shred after slow-cooking all day. Serve with good ole white rice or egg noodles. Crusty bread on the side. Wine.
