I forget how easy it is to do Tex-Mexy foods vegetarian. Seems like they require chicken or red meat at least, right? But no. No- I've not gone balls-out vegetarian. I'm not a sadist. Just shooting for more meatLESS-than meat days up in RhoRho's Bistro for 2016. It's a lofty goal but if I get tricky enough I think I can pull it off.
So I bought these crimini mushrooms at Natural Grocers. Sometimes I buy produce because I know it's good for me and I have absolutely no plan for it. I don't know if you've read about it but certain mushrooms are kinda super foods, anti cancer and shit like that. And I really, really like mushrooms. I googled "mushroom recipes" and settled on mushroom quesadillas. Of course I didn't really follow it, And that's why I have this cooking blog.
Ok - So here's what i had and what I did:
about 2 cups crimini mushrooms, sliced
a half an onion
3 cloves of garlic
a package of "Xtreme Wellness" Spinach tortillas. They're the "carb-healthy-ihs kind.
shredded pepper jack cheese
salt, pepper, chili powder, cumin
a can of black beans
plain Greek Yogurt
So I sautéed the onion, then the garlic, and threw in the mushrooms. Then the spices. I even sprinkled on some Worcestershire - just for funkiness.
Throw the tortillas straight on a gas burner and char. If you have an electric burner, I don't know what to tell you actually. It's been a minute since I had an electric stove but I know my mama much prefers them. Maybe you can still char on them? If not, just use a skillet and cook a bit.
ANYWAY. After you char them, arrange them on foil on a baking sheet and add cheese, then the shroom mixture to the tortillas. Fold them in half. Bake for about 10 minutes or until cheese is melted.
Slice into 1/3rd and top those babies with all those wonderful toppings (avocado, jalepenos, Greek yogurt, salsa, cilantro)
Don't let all my rambling freak you out. this is not rocket science.
