Sometimes you just crave bacon right? It's pretty much the only meat that I refuse to classify as meat, it's just in a food group of its own.
Here's what I used for this Sunday night bacon and egg spinach salad:
1 boiled egg
1 cup fresh organic spinach
cooked bacon (save the grease)
A good tomato if you can get your hands on one
I "wilted" the spinach a bit with some bacon grease (not too much), then added a bit of balsamic vinegar, olive oil and some salt, pepper and thyme and tossed. Then add the other ingredients. Maybe some sourdough toast on the side?
