I've found that if I want to fake like I've slaved over something all day, Mexican is a good way to do it. You can throw together enchiladas in 10 minutes flat, swear. And, they can be the yummiest things you've ever cooked!
Stuff to get:
- bag cooked frozen shrimp, thawed, peeled, deveined (the most time consuming part)
- can black beans, drained
- can diced tomatoes and green chiles
- can corn
- bag shredded mexican cheese
- Greek Yogurt
- Mexican spices (cumin, chili powder, cayenne
- yellow corn tortillas
- can red enchilada sauce
- tsp. minced garlic
- olive oil
- 9 x 11 casserole dish
Okay so it's mostly cans, you get that. Open them all. Preheat oven to 350. Mix together the cans in a bowl, with about a tsp. of each seasoning. Despite the fact that I'm writing a cooking blog it's hard for me to give measurements. I sprinkle. Taste as you go.
Toss the shrimp in olive oil and garlic.
Spread a bit of the sauce in the pan and lay out tortillas. spread on the beans mixture. Then the shrimp! Top with more tortillas, the rest of sauce and cheese. Cover with foil. Bake 30 minutes.
Serve with fresh avocado, Greek, jalapenos, and cilantro.
I feel almost silly even giving you this recipe because it's so friggin' easy. But sometimes people just need ideas!
