WARNING: THESE ARE SO DAMMMMNNNNNN GOOD!
This is a redo of a recipe I did on my old blog Rhorhosbistro.blogspot, inspired by Gwyneth Paltrow's. This time, I changed some things up a bit, and added an amazing cilantro-lime-mayo/sauce. Just slather everything with this stuff; it's so amazing.
1 lb. ground chicken
1 tsp. minced red chili pepper
2 tsp. fish sauce
3 cloves chopped garlic
about a 1/2 cup chopped cilantro
4 high-quality burger buns (I used Orowheat Crostini sandwich rolls)
Grill the burgers (about 10 minutes per side), or pan cook. I personally like the look and flavor of the grilled!
Mix together the above.
Have Oil for rubbing burgers and coating potatoes.
Blend in processor, Nutri bullet, whatever you have, cover and refrigerate:
1/4 cup Veganaise (or use real Mayo if you want to!)
1/2 cup chopped. cilantro
1 squeezed lime
2 cloves garlic
sea salt to taste
Garnish: Some sort of green (I used arugula and spinach), avocado and the delicious "mayo" and what's left of the cilantro!
Potatoes (you can start baking at about the time you start grilling the burgers):
2-3 Sweet Potatoes, regular potatoes, or a small bag of baby size potatoes.
Dice them small.
Toss in oil, sea salt and pepper with some minced garlic thrown in.
Bake potatoes at 4oo for 10 minutes, turn, and then another 10-15 minutes.
Sprinkle potatoes with fresh cilantro before serving.
What to drink? That's entirely up to you - a favorite craft beer, a red blend, a chardonnay, any of the above will work with these babies. Use the sauce for dipping potatoes too!
This is my new favorite burger. Soooooo dang good!
