Every time I go to LA I return inspired. Inspired the beauty, the happy, energetic people, the chilled culture..by all of it but mostly, to cook. I had this dish, Eggs Salmone at Urth Cafe in Santa Monica. It consisted of three of my favorite things: Lox, poached eggs and arugula.
Here's my recreation of it:
1 slice Ezekiel toast
1 farm fresh egg - poach
Arugula and spinach
I've done poached eggs with all these ingredients before but, the only thing truly different about the way they did it at Urth was wrapping the arugula in the Lox. It's just so lovely.
So, toast your bread (or English Muffin), poach your egg (or eggs), and wrap your greens in thin slices of lox. Sprinkle with some green onion. You'll feel like you're sitting at a sidewalk cafe in Santa Monica. It's like magic.
