I've been getting crazy with the avocado toast lately; doing a variation about every day! First inspired by Gwyneth Paltrow's cookbook It's All Good, I know it's such a simple dish but for some reason, not something I ever did for breakfast. I actually eat it any time during the day; I crave it. For the time being I'm on no animal foods, and this simple little meal keeps me going for hours.
1 Avocado
1 slice Ezekiel toast
1 T. Veganaise
Sea salt
Cracked Pepper
Crushed red pepper (seen in pic) or Sriracha!
Shredded cheddar if you wanna get real crazy.
A cup o Joe. Done.
