This is my "skinny" take on huevos ranchers. I pretty much have a different take on everything, but also I love to use what's on hand. I had a half can of black beans in the fridge and I was hungry. So---I took:
the half can of black beans
1 whole egg, one white
handful of cherub tomatoes
handful of spinach
crushed red pepper
...and sautéed onions first, then garlic, then beans, threw in some cumin, crushed red pepper and salt, then the tomatoes, egg and spinach and scrambled. You see a dollop of plain Greek yogurt on top. Cholula is an absolute must. No tortillas, not even any cheese here! I think that's pretty darned skinny.
Have it for breakfast, have it for lunch, have it with coffee or with a beer!
